Orange Chocolate Drop Cookies

I have learned that certain ingredients can always reside in your refrigerator and never be the same or get boring. Sticky rice is such a thing. Whatever looks like it is starting to get old gets chopped up, sauteed and tossed in to make this dish.
Some times I fry the rice, other times I heat it and present it as a bed for the main course. This morning, I have heated plates of it in the oven, ready for the eggs I am poaching. What a lovely and luscious way to ease into a summer Sunday...

Ingredients
- 1/4 cup Earth Balance (soy butter)
- 1/4 cup packed brown sugar
- 1 egg
- 1/4 cup orange marmalade
- 1 1/2 cups All Purpose Baking Mix
- 1 tsp Orange Vanilla Sugar
- 1/2 cup chopped walnuts
- 1 cup Chocolate Drops

Ingredients
- 1/4 cup Earth Balance (soy butter)
- 1/4 cup packed brown sugar
- 1 egg
- 1/4 cup orange marmalade
- 1 1/2 cups All Purpose Baking Mix
- 1 tsp Orange Vanilla Sugar
- 1/2 cup chopped walnuts
- 1 cup Chocolate Drops

Heat oven to 375 F. Beat butter in medium bowl; gradually add brown sugar and Orange Vanilla Sugar, beating until fluffy. Add egg and marmalade; beat until smooth. Add All Purpose Baking Mix, mixing well; stir in walnuts and Chocolate Drops. Drop by teaspoons onto parchment lined cookie sheet. 3 Bake 10 to 12 minutes. Remove from cookie sheet to wire rack. Cool completely.
