Easy and Delicious Mini Quiche Recipe: Perfect for Brunch or Entertaining!

Once upon a time, there was a woman who decided to make mini quiches for her friend's party. She spent hours in the kitchen carefully preparing the ingredients, rolling out the dough, and filling the muffin cups with the egg mixture. When she finally finished, she was proud of her beautiful mini quiches and couldn't wait to share them with her friends.

However, when she arrived at the party and set out her tray of mini quiches, she noticed that they were disappearing quickly. She was delighted that her friends were enjoying them so much, until she saw her friend's dog sneaking bites of the quiches when no one was looking! The dog had managed to jump up onto the table and was helping himself to the delicious treats.

The woman was both horrified and amused as she watched the dog devour several mini quiches before she could shoo him away. From then on, she made sure to keep a close eye on her mini quiches whenever there was a dog around!

Mini Quiches, with asparagus and red pepper

    • 3 eggs, beaten
    • 1/3 cup Plain Yogurt
    • 1  minced green onion
    • 1/3  minced red bell pepper
    • 4 asparagus spears, sliced
    • 1 tbsp Fines Herbs
    • 1 tsp chive blossom or sea salt
    • 1/2 recipe of Flaky Crust


    Preheat oven to 350 degrees F.  Separate the dough into 12 individual balls. Flatten each ball out, then line the bottom and sides of a dozen cups in a standard muffin tin. Beat eggs with cream and add the remaining ingredients.  Evenly distribute egg mixture between the cups. Bake in preheated oven for 18 to 20 min, or until filling is set.
