We've adapted from the Red Fire Farm website, using the freshest in season ingredients. This mouth-watering creation that blends together delightful flavors that are sure to please any palate. We want to extend a warm 'thank you' to Anna for her contribution to perfecting this recipe, and we hope that you enjoy it as much as we have.
3 Tomatoes, chopped
3 ears Corn
1 carrot, shredded
1 Green Onion, chopped
2 cloves Garlic, minced
1 tbsp minced jalapeno pepper (more if you want it hot)
1 tsp Veggie Rub or Picante Passion
1⁄4 cup Rosemary, Hot Pepper & Garlic Vinegar
2 tbsp Olive Oil
Sea Salt to taste
3 tbsp fresh Cilantro(optional)
Remove seeds from jalapeno before mincing. Chop tomatoes, salt and let sit in a colander for 30 min. to drain off extra juice. In the meantime, cut kernels from corn (yep, it's delicious raw) and mix in the rest of the ingredients, adding the drained tomatoes last and salting to taste.
