BEST OF THE BAYOU JAMBALAYA - Jambalaya is a staple of creole cooking. Early settlers to Louisiana were French and Spanish and this dish is a prime example of early American fusion cooking. Its name stems from the french "Jamba", or ham, and the Spanish "paella", or rice dish. Originally the dish was cooked in the big black pots, used for boiling syrup from sugar cane, on an open wood fire with boat oars for stirring. While its name refers to ham, recipes often exclude it. To make the most of this mixture add your choice of onion, meat, shellfish, and or sliced vegetables. When embellishing this mix simmer for another 15 min or until all ingredients are cooked thoroughly. Our Jambalaya is perfect with any combination of poultry, pork, shellfish, any type of sausage, and vegetables.
INGREDIENTS: White rice, Bayou Blackening Balm (Paprika, Cayenne Pepper, Ground Black Pepper, Garlic, Kosher Salt, & Tarragon), Onion, Crushed Red Pepper, Brown Sugar, Oregano, Rosemary, Cinnamon, Ginger, Coriander, Cloves, Celery, Caraway, and Dill Seed.
GARLIC RISOTTO - Overlooking Sardinia from the lime cliffs of Bonifacio we staved off a winter chill and nourished ourselves for an afternoon of very challenging hiking. The taverna was home to a mammoth fireplace, a famous White Bean Soup and a Garlic Risotto.
INGREDIENTS: Medium grain white rice, Tomato & Parsley Vinaigrette (parsley, dried tomatoes, tarragon, onion, garlic, kosher salt, coarse ground black pepper, crushed red pepper, celery seed, dill seed, rosemary, oregano, & caraway). JUST ADD. Olive Oil, Water, Wine Vinegar, Grated Parmesan Cheese
SEVILLIAN CURRIED RICE - My memories of Seville are of dancing in the Barrio do Santa Cruz till dawn and then watching the sunrise at a little cafe along the river near the Tower of Gold. There they served a wonderful curried rice dish, which was almost like a risotto, filled with chicken, raisins and walnuts. This is a similar recipe made with our Lemon Ginger Curry. Whether you are looking for a little sustenance after having been up dancing all night or in need of something a little exotic to get you out of the doldrums, this should do the trick.
INGREDIENTS: White rice, raisins, Lemon Ginger Curry (Ginger, Lemon Peel, Curry Powder), and Kosher salt. JUST ADD Water and olive oil.
VENETIAN RICE SALAD - Our Tomato & Parsely Spice blend is used for a wide array of recipes, not just salad dressing. One of our favorites is our Venetian inspired Rice Salad which we first enjoyed during a picnic on the Venice Lido. Our hostess assured us it was a typical dish of her family, long time residents of the Cannaregio neighborhood. We enjoyed it so much we took the recipe home as a souvenir.
