Everyone can celebrate St. Patrick in their own way, and what better way to do so than by enjoying a proper Irish coffee accompanied by a delectable snack! Unveil the magic of Irish Cream and coffee by treating yourself to irresistible cookies that embody the rich and decadent flavors of this beloved pairing.

Ingredients:

  • 1 package spice mix
  • 1/8 cup butter, softened
  • 1/8 cup Irish Cream
  • 1 egg
  • 1/2 tbsp strong black coffee

Instructions:

  1. Preheat the oven to 350°F and prepare a baking sheet with parchment paper.
  2. In a mixing bowl, combine the flour, sugar, Kosher Salt, Baking Soda, and Russian Mulling Spice.
  3. Add the softened butter, Irish Cream, egg, and strong black coffee to the dry ingredients. Mix well to form a sticky dough.
  4. Drop Spoonfuls of dough from a teaspoon 2 inches apart onto a greased cookie sheet.
  5. Bake for about 12 minutes or until the edges of the cookies begin to brown.
  6. Allow the cookies to cool on a wire rack before serving.
