Nana's Classic Baked Fish Recipe

This recipe holds a special place in my heart as it is adapted from my Nana's timeless culinary tradition. Just like her, it exudes classic comfort, evoking nostalgic memories of her cozy kitchen on chilly nights. The simplicity of this dish makes it a joy to prepare, and its satisfying flavors make it perfect for a one-dish meal.

  • Ingredients:
    • 1 lb. boneless Cod Fillets or Barramundi
    • 1 tbsp Dill Salt
    • ¼ cup milk
    • ½ small onion, chopped
    • 1 small tomato, sliced
    • 1 grated carrot
    • 2 celery stalks, sliced
    • 4 cups water crackers or Provencal Herb Crackers
    • 2 tbsp melted butter or Earth Balance (soy butter)

Instructions:

  1. Rub cod with Dill Salt and place in a greased casserole dish.
  2. Add the remaining ingredients, topping off with crushed crackers.
  3. Cook in a 350ºF oven for 25 minutes.
  4. Check the fish with a fork; if it flakes easily, it is done.
