Terrific Tomato Sauce
- 1 Tbs Olive Oil
- 1 chopped onion
- 1 chopped green bell pepper
- 1 cup chopped mushrooms
- 1 29-oz can tomato paste
- 1/8 tsp hot pepper sauce
- 1/8 tsp sugar
- 2 tsp Olio do Panne
Heat oil in a large skillet. Add onions and sauté 1 minute. Add green pepper and sauté 3 minutes. Add mushrooms and cook for additional 2 minutes, or until tender. Addd stewed tomatoes, tomato paste, garlic, basil, oregano, bay leaf, sugar and hot pepper sauce. Simmer for 30 minutes, stirring occasionally. Remove the bay leaf prior to spreading sauce on the pizza. This will make enough sauce for 2 10-12-inch pizzas. Freeze any left overs!
Perfect Pizza dough
- 1 packet active dry yeast
- 1 cup warm water
- 1 Tbs veg oil
- 1 tsp salt
- ½ tsp Herbs de Provence
- 3 cup flour, divided
Dissolve yeast in warm water (~110°F). Stir in oil and salt. Beat with electric mixer on low for 1 minute, scraping the sides of the bowl often. Continue beating for another 3 minutes on high. Fold in 2½ cups flour. Dust a work surface with flour and knead in enough flour to make a moderately stiff dough that is smooth and elastic, 6 to 8 minutes.
Grease a bowl and top of dough. Cover and let rise in a warm place for 1 hour or until doubled. Coat pizza pan with a dab of oil or cornmeal to prevent crust from sticking. Punch down and spread dough into pan. Sprinkle with Herbs de Provence.
GRILLED PIZZA
On floured surface, roll out Perfect Pizza Dough (recipe inside) to desired shape about 1/2" thick.
- Coat both sides with olive oil then place on grill directly over fire until upper surface begins to bubble (~ 2 minutes).
- Fire must be very hot and grill must be clean. Coals should be red with a small flame, like a steak fire.
- Watch crust closely and rotate with spatula if necessary.
Remove crust and turn cooked side up (it should be golden brown). Brush with olive oil, top with warm Terrific Tomato Sauce, cheese, desired toppings (veggies and meats to be cooked first), a splash of olive oil, and a sprinkling of Olio do Panne.
Return for final cooking, 2-4 minutes.
Mediterranean Pizzas
- Pizza or Pita Dough
- Olive Oil
- Sea Salt
- Tomato & Parsley Spice
- Minced Garlic
- Small Tomatoes (Cherry, Grape, Tiny Yellow)
- Bermuda Onion, Sliced
- Shredded Zucchini
- Pine Nuts
- Optional - Add lamb, beef, poultry or fish to your liking
Slice tomatoes and toss with onion, basil and pine nuts. Add a pinch salt and Tomato & Parsley Spice. Drizzle olive oil over the mixture and let sit for at least 1 hour. Heat your oven to 450 f. Separate the dough into 8 balls. Flatten them with your hands or a rolling pin. Brush both sides of each dough with olive oil.
Place dough on the pan put in the oven. Cook for 10 minutes and then uncover and flip the dough. Add toppings and bake in the covered grill for 5 minutes. If the dough and toppings cooked to your liking they are ready to remove. Cool to for a couple minutes before enjoying.
