Baked Cod with herbed crumb topping
1/4 cup fine dry bread crumbs 2 tbsp grated Parmesan cheese
1 egg white, lightly beaten 1 tsp olive oil 1 tbsp Herbs de Provence 4 (3 ounce) filets cod filets
Preheat oven to 450 F. In a small shallow bowl, stir together all ingredients except fish. Coat the rack of a broiling pan with cooking spray. Place the cod on the rack, then spoon the crumb mixture evenly on top. Bake 10 min or until the fish flakes easily with a fork and is opaque all through.
