2 cups shredded potatoes (ready mix can be found in the freezer section of the supermarket)
2 cups mashed potatoes
2 eggs, lightly beaten
1 cup Boxty Mix (plus more as needed for binding)
1 1/2 tbsp Onion and Chive Blend
6 tbsp butter,
plus more as needed for frying
3 tbsp olive oil for frying
Into a large mixing bowl combine shredded potatoes, mashed potatoes, eggs, shallots, and salt and pepper, stir to combine. Add the Bisquick and mix throughout, adding more if needed to bind the mixture for forming the pancakes. Stir in the Boxty blend. Form patties using dampened hands and set onto a parchment-lined baking sheet. On medium heat, add butter and olive oil to a large-sized nonstick pan, swirl to cover the bottom of the pan. Set Boxty into the pan leaving room around each pancake and being careful not to crowd the pan. Fry around 3-4 minutes on each side until golden brown colored and hot inside. Boxty freeze well wrapped in freezer paper. May be baked frozen in a preheated 350-degree oven around twenty minutes or longer until hot throughout.
