Choose the appropriate knife based on the cheese's texture; soft cheeses pair well with perforated or thin blades, while hard cheeses benefit from a sturdy blade. To maintain the cheese's shape, slice lengthwise from the tip to the edge. Utilize a wooden cutting board instead of hard surfaces like glass, marble, or ceramic to avoid damaging your tools. Keep your prep and serving boards separate to safeguard your knives from dulling and prevent scratches on the serving boards.

Flat Knife - Flat cheese knives are well-suited for slicing or cubing hard, semi-hard, and crumbly cheeses such as Swiss, Gruyère, Provolone, and select semi-hard blue cheeses.

When using a flat cheese knife, hold it upright and glide through the cheese in a single, smooth motion. Additionally, you can employ a flat cheese knife akin to a chisel for shaving hard cheeses. Opting for a sharp knife enhances precision while cutting and minimizes the likelihood of mishaps.

Avoid cutting on surfaces like glass, marble, or ceramic, as doing so can blunt your knife and escalate the chances of accidents. Preventing the dulling and scratching of knives on serving boards is crucial during cheese preparation. For maintaining the cheese's shape, cut slices lengthwise from the tip to the outer edge.

Heart Knife - The heart knife, also recognized as the almond, Parmesan, or bell knife, is specifically designed for slicing and dividing chunks from hard, dry, and crumbly cheeses. When slicing a heart-shaped cheese, begin at the core and progress outward towards the rind, ensuring uniformly cut slices. Even though the slices may appear irregular in shape, they will still offer a delightful taste experience.

For hard cheeses, utilize a sharp knife to slice them cleanly without causing them to crumble. When handling soft-ripened cheeses, opt for a hollow blade knife to prevent the rind from sticking to the blade during cutting. For crumbly cheeses like Roquefort, employ a cheese wire for precise cutting.

Before serving, allow the cheese to reach room temperature; however, some cheeses may yield cleaner cuts when sliced directly from the fridge. Enhance the cheese presentation by serving it alongside bread, crackers, fruits, nuts, condiments, and other accompaniments.

Narrow Plane Knife - The narrow plane cheese knife, also referred to as a trapezium knife, is designed for both cutting cheese and chipping away at a block. Similar to the flat cheese knife, it typically features a more rectangular shape with two sharp sides instead of one. This versatile knife is suitable for various cheeses, including hard, semi-hard, and soft varieties. Its short, sharp blade is particularly effective for slicing large chunks of hard cheese and can also be utilized for chipping away at cheese blocks.

To use this knife, hold it vertically and push it through the cheese in one smooth motion. Using a sharp knife enhances control and reduces the risk of food slipping. When cutting different types of cheese, consider the specific shape and texture of each to ensure that every piece captures the full spectrum of flavors and textures.
