On a hot and steamy afternoon in Ghana, I first encountered Garlic Ginger Salt. The humidity was so oppressive that even the cats considered it a “Dog Day Afternoon.” As my hostess prepared our afternoon meal, I wondered why she would turn on the stove, much less fry a banana in oil on such a scorching day. I did not know what a delightful treat I was in for. She was actually preparing plantains, a starchy and versatile cousin to the banana. Flavored with her spice combination, they were an extraordinary dish that would make any meal complete. Later on, on the trip, we found ourselves enjoying this spice with all sorts of root vegetables, fish, and poultry. With each dish, it took on a different character.

Grilled Potatoes
6 large potatoes, peeled
4 green onions, finely chopped
2 tbsp butter 1 tbsp Garlic Ginger Salt
Preheat an outdoor grill for high heat. Microwave potatoes on high for 5 to 8 min. Potatoes should be tender but still firm, cool and cube. Placed cubed potatoes on a large piece of foil. Top with green onions, dot with butter and season with Spud Spice. Tightly seal foil around the potatoes. Cook on the prepared grill for at least 20 min., Until potatoes are tender and golden brown.
