1 lb venison, Cut into 1/4 “steaks, fat &silver skin removed 8 oz chicken broth 1 cup white wine Juice of 1 lemon 6 fresh scallions, chopped 1 cup fresh chopped parsley 2 tbsp Game Seasoning 4 tbsp olive oil 1 cup red wine vinegar 1 cup water Marinate venison by covering with water, red wine vinegar and 1 tbsp Game Seasoning for 2 to 3 hours. Sauté scallions & parsley in 2 tbsp olive oil until tender. Drain venison, wash very well, towel dry, flatten venison well with heavy object and cut into medallions. Sauté venison on high heat in a pan for 2 to 3 min on each side with 1 tbsp Game Seasoning & 2 tbsp olive oil. Remove venison from pan and add chicken broth, wine, lemon juice. Bring to a boil, add scallion mixture & venison and cook 3 to 5 min or until sauce thickens.
