Gallo Pinto: An Empowering Taste of the Tropics 

This mix was inspired by a fishing trip to Costa Rica, where we discovered a seaside restaurant run by a women's cooperative. These industrious ladies prepared our fresh-caught fish using various methods, yet one element stood out - the fragrant black beans and rice.

The women had established the restaurant to achieve financial independence, as many relied on their husbands' often seasonal employment. By working together, they built this welcoming eatery, providing themselves a steady income and the chance to showcase their culinary skills with recipes handed down through generations.

While our fish stayed in Costa Rica, their black beans and rice recipe came home with us. Delivering the bold, balanced flavors we savored - earthy beans, fluffy rice, and vibrant spices our Gallo Pinto Mix can transport you to the tropics.  

Kraft Burlap Bag INGREDIENTS: Medium grain white rice, black beans, Jamaican Jerk Seasoning.

Instructions:

Empty the bag of beans into a small bowl with 1 cup of water.
Let sit overnight. The next day simmer the beans and their water in a covered saute pan, until the water evaporated.
In a separate pan cook the rice in 1 1/2 cups fish or beef stock or water,  bring to a boil. Reduce heat and simmer for 15 minutes. Remove from heat, allow to sit covered for 10 minutes. In a saute pan add 
1 tbsp Olive Oil and ½ Tbsp of the spice packet enclosed, 1 bell pepper diced, 
1 carrot diced, 1 onion sliced thin, 2 stalks of celery diced.
Add the cooked black beans to the skillet and mix well with the vegetables. Add 1/2 cup stock, simmer for 10 more minutes. Fold in the cooked rice to the skillet. Stir gently to avoid mashing the beans. Serve with chopped cilantro (optional).

Serve on it's own or accompanied by a grilled fish, poultry, pork or beef.
