BLACK BEAN & BARLEY STEW - A good friend and one of our earliest supporters, Carol Cataldo came up with this recipe. We first had it one New Year's weekend after a day of skiing in Vermont. It is both hearty and tasteful. The cornerstone of the recipe is our Aussie Outback Rub. The way it blends with the black beans, barley, and other assorted ingredients leaves a memorable taste in your mouth. While it is great on its own, try it with portabello mushrooms and ground turkey, for a meal you are unlikely to forget very soon.
INGREDIENTS: black beans, white beans, barley, split peas, and Aussie Outback Rub (onion, garlic, sea salt, coarse ground black pepper, crushed red pepper, celery seed, dill seed, rosemary, oregano, and caraway). JUST ADD: water.

The taverna was home to a mammoth fireplace and the famous White Bean Soup. Now, when I desire something hot & substantial, this is what I prepare.
