FEATURED RECIPE: Cranberry Sage Roasted Chicken
- 1 whole chicken (3-4 lbs)
- 1/2 cup Cranberry Sage Vinegar
- 1/4 cup Extra Virgin Olive Oil
- 2 tbsp fresh sage, chopped (or 1 tbsp dried)
- 3 cloves garlic, minced
- 1 tsp Butchers Black Pepper
- Salt to taste
- 1 cup fresh cranberries (optional, for roasting pan)
In a bowl, whisk together Cranberry Sage Vinegar, olive oil, sage, garlic, and pepper. Place chicken in a roasting pan and brush generously with marinade. Let marinate for at least 2 hours or overnight. Roast at 375°F for 1.5 hours or until internal temperature reaches 165°F, basting occasionally with pan juices. Optional: scatter fresh cranberries around chicken during last 30 minutes of roasting. Let rest 10 minutes before carving.
