There, an elderly Milanese woman served the most extraordinary espresso cookies I'd ever tasted - dark as midnight, fragrant with fresh-ground coffee, and impossibly delicate. "Biscotti all'espresso della nonna," she said with a knowing smile. I missed my train that evening, but gained something far more valuable: her grandmother's secret recipe for gluten-free espresso cookies that lose none of their traditional magic.

Ingredients: Tapioca, Arrowroot and Rice Flours, Fair Trade Majestic Dutch Cocoa Powder, Chocolate Chips, Baking Powder, Orange Vanilla Sugar (special pure orange extract [alcohol, water, and orange oil], and Vanilla Extract [vanilla, water, propylene glycol, and caramel color]) and Kosher Salt.
Combine the contents of the package with
1/2 CUP BUTTER
1 EGG
1 TBSP Espresso
or strong coffee
Blend all ingredients well, including chocolate drops. Dough will be stiff. Refrigerate for at least 1 hour. Drop dough by the spoonful onto a greased cookie sheet. Bake for 8 to 10 minutes on 375 f or until cookies begin to crisp to your liking.
This mix makes 2 dozen cookies.
