Slow Roasted Salmon
Slow roasting brings out the sweet and savory juices of this fish.
- 1 2-lb. skinless salmon fillet, preferably center-cut
- 1/3 cup extra virgin olive oil
- 1/2 cup Horseradish or Berkshire Blue Country Mustard
- 2 tbsp Fines Herbs
- 2 tbsp Butchers Black Pepper
Preheat oven to 275°. Coat a shallow 3-qt. baking dish with cooking spray, butter or oil; place salmon inside. Spread Mustard over the fish, sprinkle herbs and pepper over the top. Coat with oil. Roast until salmon is just cooked through (the tip of a knife will slide through easily and flesh will be slightly opaque), 30–40 minutes for medium-rare.Transfer salmon to a platter, breaking it into large pieces as you go. Spoon mustard and oil from baking dish over and serve.

Mix 1 tbsp to 1/3 cup sour cream for dip.
