Serves 6-8 | Total Time: 1 hour 15 minutes

Ingredients:

Chicken Base:

  • 1 whole chicken (3-4 lbs), cut into pieces
  • 8 cups water
  • 2 bay leaves
  • 1 large onion, quartered
  • 3 celery stalks, chopped
  • 2 carrots, sliced
  • 1 tsp salt
  • ½ tsp black pepper

  • 2 cups all-purpose flour
  • 1 tbsp baking powder

Instructions:

Prepare the Chicken:

  1. Simmer chicken: Place chicken pieces, water, bay leaves, and quartered onion in large pot. Bring to boil, then simmer 45 minutes until tender.
  2. Strain and shred: Remove chicken, strain broth, and return 6 cups to pot. Cool chicken, remove skin/bones, and shred meat.
  3. Build the base: Add celery and carrots to broth. Using your Hevea wood spoon, stir in shredded chicken, salt, and pepper. Simmer 10 minutes.

Make the Gravy:
Create roux: In small pan, melt butter. Whisk in flour with wooden spoon until smooth. Cook 2 minutes until golden.

Mix dry ingredients: In bowl, whisk flour, baking powder, and salt.
