Basic Grain Bowl Recipe (Using 1 Cup of Pioneer’s Path Mix)
Ingredients:
- 1 cup Pioneer’s Path Lentil & Barley Mix
- 2 ½ cups water or broth
- 1 cup fresh, roasted or steamed vegetables (such as zucchini, bell peppers, or spinach)
- ¼ cup crumbled feta or goat cheese (optional)
- 2 tbsp toasted nuts or seeds (such as pumpkin seeds)
- Drizzle of Extra Virgin Olive Oil or your favorite dressing
Instructions:
Combine the mix and water or broth in a pot; bring to a boil, then reduce heat and simmer, covered, for 40-45 minutes or until tender. Drain any excess liquid. In a bowl, combine cooked mix with vegetables, cheese (if using), and nuts/seeds. Drizzle with oil or dressing, toss gently, serve with fish or other favorite proteins & enjoy.

Instructions:
In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery; sauté until softened (about 5 minutes). Add the Pioneer’s Path mix and broth. Stir well. Bring to a boil, then reduce heat and simmer, covered, for 40-45 minutes, or until lentils and barley are tender. Season with salt and pepper to taste. Serve warm.
