Garden Veggie Pizza with Whipped Ricotta
- 1 prepared pizza dough
- ½ cup ricotta cheese
- 1 tbsp Extra Virgin Olive Oil
- 1 small zucchini—very thinly sliced
- ½ cup cherry tomatoes—halved
- ¼ cup thinly sliced red onion
- ¾ cup shredded mozzarella
- ¼ cup grated Parmesan
- 1 tsp Pizza Spice
Heat oven to 475°F with a baking sheet or pizza stone inside. Stir the ricotta with the garlic, a pinch of salt, pepper, and half the Parmesan. Stretch the dough into a 10–12" round on parchment, brush the edge with olive oil, and spread the ricotta mixture over the dough, leaving a small border. Top with mozzarella, zucchini, tomatoes, onion, and the remaining Parmesan. Slide onto the hot pan and bake for 10–14 minutes, until the crust is golden and the vegetables are tender at the edges. Finish with basil, let rest for 2 minutes, and roll the pizza wheel through each warm, cheesy slice.
Apple Rose Tarts
- 1 sheet puff pastry, thawed
- 2 apples, cored and sliced very thinly
- 2 tbsp apricot preserves
- 1 tbsp lemon juice
- tbsp sugar
- ½ tsp cinnamon
- 1 tbsp flour;
- powdered sugar, for finishing.
Heat oven to 375°F. Warm the apple slices with lemon juice and 1 tablespoon water in the microwave for 2–3 minutes, just until pliable. Stir together the sugar and cinnamon. Lightly flour your work surface and use the Pizza & Pastry Wheel to cut the puff pastry into six long strips, each about 2" wide. Spread each strip with a thin layer of apricot preserves, then overlap apple slices along the top half of the strip so their rounded edges peek above the pastry. Sprinkle with cinnamon sugar, fold the lower half of the pastry over the apples, and roll each strip from one end into a rose shape. Place in a greased muffin tin and bake 35–40 minutes, until deeply golden and crisp. Cool slightly, dust with powdered sugar, and serve warm.
