POLISH CRUMB CAKE MIX "Placek z Kruszonka" - A traditional morning treat that is loved for its sweet, crumbly topping and tender cake base. It's origins are unknown but print recipes date back to at least the mid-20th century The cake is so popular in Poland that it can often be found in bakeries and cafes, as well as being a staple at family gatherings and holidays.
In Spring this mix can be altered to make Polish Rhubarb Crumb Cake (Ciasto z Rabarbarem i Kruszonka). Cook 3 cups of chopped rhubarb stalks, with 1/4 cup of sugar until the sugar dissolves, typically about 30 minutes. Add prepared rhubarb to the cake batter before baking. Add at least 5 minutes to your baking time as the fruit will make the batter moister.

Instructions:
Preheat your oven to 350 f.
For Crumb Topping: Blend together
1/2 Cup Butter, Softened &
smaller bag of spiced sugar. The mixture should be the consistency of small pebbles. Set aside.
For Cake: In a large bowl cream together
1 egg lightly beaten,
½ cup sour cream (or plain yogurt)
1/4 cup butter, softened (or canola oil)
Add the contents of the bag. Mix all ingredients well. Prepare a 9x9 or 9xq13 pan with butter or non stick cooking spray. Sprinkle crumb mixture evenly over top of the batter. Bake in preheated oven for about 45 minutes, or until the top is lightly browned. Cool to room temperature and refrigerate 1 hour and up to overnight. Cut into squares and serve. The addition of Jam, nuts or candy chips will give this cake your own unique signature.
