Cakes with Southern Charm - Red Velvet Cake

Southern cakes are known for their unique ingredients, preparation methods, decadence, and rich flavors.  This offering is in the tradition of all good southern cakes = indulgent, flavorful, and a true celebration of the region's culinary traditions.

RED VELVET CAKE  - This cake has a distinctive red hue and a fluffy, tender texture. It's often frosted with a cream cheese frosting and decorated with pecans or other toppings.  Red velvet cake has been on the menu at Stein’s Bakery in Dallas since it opened in the early 1860s.  Many experts consider the recipe to have been popularized in 1911 when Rufus Estes, a formerly enslaved person, and chef, incorporated a recipe for a sweet velvet cake in his cookbook. During this era cooks began to notice combining acidic ingredients like vinegar with cocoa, a cake would develop a faintly red hue

Gift Pail (10 oz) INGREDIENTS: Wheat Flour Enriched (Niacin, reduced iron, thiamine, mononitrate, riboflavin, folic acid), Malted Barley Flour, Fair Trade Majestic Dutch Baking Cocoa, Beet Powder, Cane Sugar, cinnamon, nutmeg, Orange Extract (alcohol, water, and orange oil), vanilla extract (vanilla, water, propylene glycol, and caramel color), and Kosher Salt. 

Recipe

Preheat your oven to 350 f.   
In a large bowl cream together
 1/2 cup Vegetable Oil,    
2 eggs, 
1/4 cup sour cream,
1/2 cup half n Half, with 1 tbsp Lemon Juice
Add lemon juice to the half n half and let sit for 
10 min.  Incorporate the remaining liquids. 
Fold in the contents of the bags until your batter is well mixed.Butter a 8” cake pan and dust with flour, shaking out the excess. For a layer cake pour 1/2 the batter into the prepared pan - it will level itself - and bake for 15 to 20 min, or until a toothpick inserted in the center comes out clean. Repeat with the remaining batter once the pan is cooled. 
You can make a single layer cake as well, bake for 25-40 min, or until a toothpick inserted in the center comes out clean.
