CORSICAN WHITE BEAN STEW - Corsica, from the rocky sundrenched beaches to the glacier lakes, this island of mountains has a style all its own. Whether you are there for the boating, trekking, or golf, you can not help but appreciate its cuisine. Overlooking Sardinia from the lime cliffs of Bonifacio we staved off a winter chill and nourished ourselves for an afternoon of very challenging hiking. The taverna was home to a  mammoth fireplace and the famous White Bean Soup. Now, when I desire something hot & substantial, this is what I prepare.

INGREDIENTS: Navy and cannellini beans, onion, garlic, Tomato & Parsley Vinaigrette (parsley, sun-dried tomatoes, tarragon, Coarse ground black pepper, crushed red pepper,  celery seed,  dill seed, rosemary, oregano, and rye), and kosher salt.
