Use & Care Insert the probe into the thickest part of meat, avoiding bone and fat. Leave in place while cooking and check the dial as needed. Hand wash the probe only; do not immerse the dial in water. Dry thoroughly after use.
Heat oven to 425°F. Pat the chicken dry, rub with olive oil, and season with salt, pepper, and herbs. Place the lemon and garlic inside the cavity, then set chicken breast-side up in a roasting pan. Insert the thermometer into the thickest part of the thigh without touching bone. Roast for 45–60 minutes, until it reaches 165°F. Rest 10 minutes before carving.
