PASTA WITH SCAMPI SAUCE
- 2 tbsp Extra Virgin Olive Oil
- 1/2 chicken stock
- ½ cup dry white wine
- 1/4 cup butter
- 1 tbsp Tomato & Parsley Spice
- 1 lb shelled and deveined shrimp, optional
- 1 8oz packet Rice Vermicelli (Angel Hair)
In a sauce pan heat olive oil, wine and butter on high. As the mixture begins to bubble, reduce heat to medium and add the spice packet and shrimp. Add dried pasta. Cover and let simmer for about 10 minutes, tossing a couple times to ensure the pasta cooks evenly.
This dish is also nice substituting shrimp for clams or sausage. Or try it with mixed vegetables and tofu. Serve with grated romano cheese and lemon wedges.
