The Story:
"Beau Monde" (French for "beautiful world") is a classic Mid-Century American seasoning blend that adds depth and complexity to creamy pasta dishes. Its warm, aromatic notes perfectly complement the richness of carbonara while balancing the earthiness of mushrooms and kale—a modern interpretation of the hearty Tuscan tradition.
Pappardelle Carbonara with Kale and Pancetta - Serves 2
- 8oz Pappardelle
- 1 tbsp Extra Virgin Olive Oil
- 1/4 cup Pancetta or Bacon, chopped
- 1 tbsp Single Cream/Half and Half
- 1 Egg
- 1 cup chopped Kale or Arugula
- 1 cup sliced mushrooms
- 1 tsp + 1 pinch Beau Monde Seasoning (included)
- Parmesan cheese, grated- 2-3 tbsp.
Place a pan of lightly salted water over high heat to bring to a boil. Sprinkle a pinch of Beau Monde into the water. Add pappardelle to boiling water. Cook pasta to taste, then drain well. Meanwhile, fry the pancetta and mushrooms, add kale to it in the last minute just to wilt it. Set aside.
Beat the egg with a fork and add 1 tsp Beau Monde and grated parmesan to it. Drain the pasta, reserving ½ cup of water and add pasta to the pan with pancetta and arugula. Mix everything over low heat with a spoonful of cream to coat.
Take your pasta off the heat and mix in the egg and cheese mixture tossing the pasta gently, add a splash of reserved water to keep things slightly runny but it shouldn't be swimming in sauce. Serve with more freshly grated parmesan cheese.
