I first discovered the delightful combination of Red Beans and Rice at a local bodega, where the house specialty of Picante Chicken and Rice opened my eyes to how the side dish could be the entire meal. Flavored with the same captivating spice blend, the rice was filled with vibrant red beans and colorful bell peppers.

Kraft Burlap Bag INGREDIENTS: Medium grain white rice, red beans, Picante Passion.

Instructions:

Empty the bag of beans into a small bowl with 1 cup of water.
Let sit overnight. The next day simmer the beans and their water in a covered saute pan, until the water evaporated.
In a separate pan cook the rice in1 1/2 cups vegetable stock or water,  bring to a boil. Reduce heat and simmer for 15 minutes.
Remove from heat, allow to sit covered for 10 minutes.In a saute pan add 
1 tbsp Olive Oil and ½ Tbsp of the spice packet enclosed, 1 green bell pepper diced, 1 onion sliced thin, 2 stalks of celery diced.
Simmer until the onions are translucent. Add the Beans and 1, 14.5oz can of diced tomatoes bring to a boil and then simmer for 30 min. Mash some of the beans against the side of the pot to thicken the mixture. Fold in Cooked Rice.

Serve on it's own or accompanied by a grilled fish, poultry, pork or beef.
