
Nana's Pumpkin Bread

Every fall, the tired old coffee cans would come out of Nana's cupboard and the scent of pumpkin and spiced would fill the air of her kitchen. She would make a couple batches and end up with a dozen funny round breads. Some went into the freezer and others got dressed up for gifts. The shape lent itself to a pretty bag and a bow. The reason for giving was nothing more than to celebrate the season.
Ingredients:
- 1 package Farmers Market Spice Mix (Gluten Free option available)
- 3 large eggs
- 1 cup pumpkin puree
- 1/2 cup vegetable oil
- 1/4 cup milk
- 1 tsp Maple Sugar
- 1/2 cup Sun Maid raisins (optional)
- 1/2 cup chopped walnuts or pumpkin seeds (optional)
Instructions:
- Preheat oven to 350°F. Grease 1-2 metal coffee cans or a 9x5-inch loaf pan.
- In a medium bowl, whisk together the flour, baking soda, salt, and Nana's Spice Mix.
- In a large bowl, beat the eggs and sugars until light and fluffy. Beat in the pumpkin puree and vegetable oil.
- Fold the dry ingredients into the wet ingredients alternately with the milk, mixing just until incorporated. Fold in the raisins and/or nuts if using.
- Divide the batter evenly between the prepared coffee cans or pour into the loaf pan.
- Bake for 55-65 minutes, until a toothpick inserted in the center comes out clean.
- Allow to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
